Family Favorite Roasted Broccoli

Hello everyone! I am so happy to be back in the kitchen and sharing my recipes with you again. I decided to go back to the basics and share my daughter’s FAVORITE food. She LOVES (and I mean LOVES) broccoli. I never thought I would have a kid who loves a vegetable that has a “yucky” reputation. I will admit I have turned broccoli “haters” into “lovers” with my roasted broccoli recipe. Crazy thing is that it is EASY and only 3 INGREDIENTS!

This recipe was inspired by some roasted broccoli I had at a local restaurant. They prepared the broccoli to the point that it was almost burnt. I don’t know what it is about almost burnt broccoli, but it brings out this amazing nutty flavor. The texture is crunchy, yet soft. It’s simply amazing. I hope you enjoy this recipe as much as my family does!


first, preheat oven to 425 degrees FAHRENHEIT.

second, and probably the most important step, cut the broccoli into smaller, almost same size pieces. This allows the broccoli to cook evenly and get that CRISPY/soft texture that makes it out of this world.

To make this mess free, place the broccoli into a plastic bag, pour the olive oil into the bag and shake to incorporate.

Place on a foil lined baking sheet (i use the nonstick foil). be sure to spread evenly and do not overcrowd. also, make sure the flat edges lay flat against the sheet. season with kosher salt and pepper. Place in oven for 10 minutes, stir/flip, and cook for another 10 minutes.

Ingredients:

  • 1 head of broccoli
  • 2-3 tablespoons olive oil
  • Kosher salt and pepper

Instructions:

  2. Cut the broccoli into smaller, almost same size pieces.
  3. Place the broccoli into a plastic bag, pour in the olive oil, and shake to incorporate.
  4. Place broccoli on a foil lined baking sheet (I use non-stick foil). Be sure to spread evenly and do not overcrowd. Also, make sure the flat edges lay flat against the sheet.
  5. Place in oven for 10 minutes, stir/flip and cook for another 10 minutes.
  6. Serve and enjoy warm.

Notes:

  • Squeeze some lemon on top to add some freshness.
  • Serve as a side dish or incorporate into your favorite pasta dish.
