When you're a mom, breakfast time tends to come and go. There have been many days where noon rolls around, and I have fed everyone but myself. I end up resulting to a convenient granola bar or making myself a bowl of cereal. I know I am not alone in this, and we need to do better especially if we are looking to survive a typical Momday.

I made this cottage cheese bowl a lot when I was pregnant and working. It is filling and easy to whip up. The only preparation you need to do is clean and chop the fruit. Everything else can be dumped into a bowl. I love using fruit that I get fresh at our local farmers market. I mean, look at these beauties!

If you have a hate relationship with cottage cheese, you can substitute for your favorite yogurt. Adding blueberries or any fruit you have on hand will still yield an amazing bowl of goodness. I hope you enjoy and get that boost of energy that we all need!



Breakfast Cottage Cheese Bowl

Ingredients:

  • 1/2 cup - Cottage Cheese
  • 1/3 cup - Fresh Strawberries
  • 1/3 cup - Granola
  • Drizzle of Honey

Instructions:

  1. Clean and chop some strawberries in bite size pieces. In a breakfast bowl, add cottage cheese, strawberries, and granola.
  2. Top with a drizzle of honey.

Notes:

    Clean and cut your strawberries the night before to have ready to go in the morning.
